Spice up your day with this Thai pickled cucumber recipe! The taste is reminiscent of that of the Green Papaya Salad, but without the need to hassle to find the exotic ingredients.
1 english cucumber; julienned and seeds removed
1/2 teaspoon salt
1 lime; zested and juiced
2 tablespoons granulated sugar
2 tablespoons fish sauce
1/4 teaspoon red chili flakes
8 cherry tomatoes; halved
Thoroughly combine julienned cucumber and salt in a bowl and let sit for 10 minutes. Then, drain excess juice.
Meanwhile, combine lime juice, sugar, fish sauce, and red chili flakes in a small bowl. Whisk until the sugar is fully dissolved.
Add cherry tomatoes and cucumber to marinade and marinate for 15 minutes.
Garnish with lime zest and serve immediately.
