1 lb. petite rainbow carrots; peeled and sliced in half horizontally
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1 tablespoon brown sugar
3 sprigs coriander; thinly sliced
Preheat oven to 400F.
On a large baking sheet lined with parchment paper, toss carrots, olive oil, salt, pepper, and brown sugar until well combined. Spread carrots out on one even layer.
