Why buy jarred pickles when fresh ones are so easy to make? You can use the same marinade with carrots, cucumbers, or any other vegetable and get equally delicious results!
1/2 cup rainbow carrots; grated
1/2 cup rice vinegar
2 tablespoons sugar
1 teaspoon salt
Put carrots, rice vinegar, sugar, and salt in a mason jar. Seal the lid and shake well until mixed evenly; leave to marinade for 30 minutes.
To store the pickle, drain the marinade after 2 hours to prevent the vinegar from overpowering the freshness of the carrots.
