1 small daikon; diced
2 lemons; juiced and zested
1/2 cup soy sauce
4 tablespoons salt
1/4 cup sugar
2 cups cooked sushi rice
1 sheet seaweed
Coat daikon cubes with 2 tablespoons of salt in a colander; fill a large bag with ice, seal it, and place on top of daikon cubes; let the daikon sit for 20 minutes over a sink.
Meanwhile, prepare the marinade: mix lemon juice, lemon zest, soy sauce, remaining salt, and sugar until the salt and sugar has completely dissolved.
Drain any liquid remaining in the colander and use paper towels to absorb the moisture from the daikon. Then, place daikon into the mixture; cover and refrigerate overnight.
Working over a surface lined with plastic wrap, spread a little less than half a cup of sushi rice into a triangle shape. Place a fair amount of daikon into the center of the triangle and cover with another half cup of rice. Place another sheet of plastic wrap over to cover and twist to encapsulate. Then, use your hands to shape into a triangular prism (or sphere if you prefer).
Decorate by cutting seaweed into desired shapes and sticking on top of rice.
Repeat steps four and five until you run out of ingredients.
