Consider adding this to your next pasta dish; you will be impressed by the flavor and texture that such a simple technique can transform your herbs.
40 fresh basil leaves
Unflavored cooking oil
1/2 teaspoon salt
1/4 teaspoon sugar
Wash the fresh basil leaves under cold water and dry completely using paper towels.
Fill a non-stick pan with cooking oil until it covers 1/2-inch above the pan.
Heat the pan until the oil reaches 350 F or until the oil is very hot and you can see a swirly reflection when looking into it.
Brush garlic mixture on one side of each of the baguette slices. Top with additional garlic that was not brushed on to the slices.
One at a time, place basil leaves in oil and fry for 30 seconds and scoop out immediately and place onto a large plate lined with paper towels.
Absorb as much of the oil as possible and transfer chips to a large bowl. Toss with salt & sugar to taste, and serve.
