When poke meets sushi meets pizza. This plant-based dish is the perfect fusion between eastern and western food. Try this original dish today, and you definitely won't be let down!
2.5 rice-cooker cups uncooked sushi rice
2 ripe mangoes
1 English cucumber
6 sheets nori
4 oz. arugula
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
3 tablespoons sushi vinegar
2 servings teriyaki tofu
8 oz. wakame salad
1 avocado; sliced
4 oz. seasoned edamame pods
Cook the sushi rice according to your rice cooker's instructions.
Meanwhile, prepare the rest of the ingredients. Remove the pit from the mangoes and slice one-half of a mango into matchsticks; dice the other three-halves of mango. Slice one-third of the cucumber into thin matchsticks; dice the other two-thirds of the cucumber. Cut 2 sheets of nori in half, widthwise. In a colander, dress arugula with olive oil, balsamic vinegar, and salt to taste (you may need more or less of each than the recipe calls for).
When the rice finishes cooking, incorporate sushi vinegar to the rice thoroughly. Take the rice out of the rice cooker and allow to it cool.
Attach a half-sheet of nori with a full sheet of nori using a bit of water to seal the edges. Then, spread a thin layer of rice over the half sheet of nori and press down firmly. (Use gloves or dip your fingers in water to prevent the rice from sticking to your fingers.) Add slices of mango, cucumber, and avocado, along with wakame salad, and teriyaki sauce from the teriyaki tofu to the middle of the rice. Roll like a sushi roll to form the "pizza crust".
Then, use scissors to cut and form a triangle shape to look like a pizza with the other side of the nori. Spread a thin layer of rice over the triangle and press down firmly. Add dressed arugula.
In a small bowl, combine one-fourth of each of the following and mix well: teriyaki tofu, diced mango, diced cucumber, edamame pods. Pour over arugula. Then, add additional teriyaki sauce.
Garnish with leftover wakame salad and sesame seeds.
Repeat steps 5 to 8 for the other 3 slices of sushi pizza.
