Teriyaki Tofu Bowl
Easy for All
100% vegan, 100% delicious. This tangy asian delight is packed with protein and takes less than 30 minutes to make! This is the definition of REAL tasty fast food.
1 1/2 cups uncooked jasmine rice
1 (15 oz.) box firm tofu
1/2 cup soy sauce
1/2 cup granulated sugar
1/4 cup rice vinegar
1/2 teaspoon ground ginger
2 teaspoons cornstarch
1 ripe avocado
fresh coriandre; chopped
Cook jasmine rice according to rice cooker's instructions or in a pot according to these instructions 45 minutes before you want to eat. (You can make the teriyaki tofu during this time).
Drain water from box of tofu and slice tofu into bite size pieces.
Place tofu between paper towels and put a semi-heavy object such as a baking sheet on top of the tofu for 10 minutes to drain excess water.
Meanwhile, make the teriyaki sauce. In a saucepan, combine soy sauce, granulated sugar, rice vinegar, and ground ginger over medium heat. Stir frequently until the sugar has completely dissolved.
Mix two tablespoons of water with the cornstarch to make a cornstarch slurry. When the sugar has completely dissolved, add the slurry to the teriyaki sauce.
Continue to cook until the mixture has reduced to a thick sauce. (Do not reduce overcook because the sauce will thicken more when cooled).
Add tofu to teriyaki sauce and cook for 7 minutes, or until hot, making sure to coat all pieces of tofu entirely.
Serve tofu with jasmine rice and sliced avocado and sprinkle coriandre to top.
