If you love the classic Calfornia Sushi Roll, you'll definitely love this Surimi Crab Panini. Made with almost the exact same ingredients, a panini is an excellent way to re-create those delicious bold flavors in a way that is much easier for the average person to make.
1 ciabatta loaf
salt & pepper
8 oz. surimi crab sticks
2 tablespoons sriracha mayo
1 lettuce head
1 english cucumber; thinly sliced
1 avocado; thinly sliced
Slice four 1/2 inch thick slices of the ciabatta and season both sides with salt, pepper, and olive oil.
Heat a drizzle of olive oil in a non-stick pan over medium heat.
When hot, toast ciabatta slices until bottom is golden brown. Flip over, and toast until the other side is golden brown.
In a medium bowl, cut crab sticks into bite sized pieces and shred using hands.
Mix sriracha mayo with shredded crab.
Then, start assembling the panini. First, place a lettuce leaf on a ciabatta slice, followed by cucumber, and crab mix. Top with avocado, coriander, and unagi sauce and another ciabatta slice to serve.
