Miso Salmon Zoodles
A bit Advanced
If you are comfortable cooking fish, marinating salmon in this quick miso marinade overnight will significantly add a depth of deliciousness to the salmon.
3 6-ounce salmon filets
1/2 cup miso paste
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon sesame oil
1/4 teaspoon ground ginger
3 zucchini; julienned
Combine miso paste, 2 tablespoons of soy sauce, brown sugar, sesame oil, and ground ginger in a bowl. Coat salmon filets completely in miso marinade and leave to marinate the refrigerator overnight.
Preheat the oven to 400F. Line a baking sheet with parchment paper and place salmon filets above. Bake salmon for about 12-15 minutes, until lightened in color and flaking.
Divide julienned zucchini among 3 bowls and top with a few tablespoons of fresh ponzu sauce each; top with salmon and garnish with coriander and sesame seeds.
