Maple Salmon Bowl
Maple and soy is a combo I've loved for a long time; I'm excited to be able to share one of my recipes in frequent rotation!
1 cup maple syrup
3/4 cup soy sauce
3 6-ounce salmon filets
8 ounces mixed greens
8 ounces cherry tomatoes; halved
In a bowl, combine maple syrup and soy sauce; mix to combine -- Reserve half the mixture.
In one half the marinade, place salmon filets into the bowl, cover with plastic wrap, and marinate for at least an hour.
Preheat the oven to 400F. Line a baking sheet with parchment paper and place filets on it. Bake for 12 minutes, or until flaky and opaque.
Remove the skin from the salmon; assemble salad bowls by dividing mixed greens into 3 bowls and topping it with salmon; top with cherry tomatoes; serve with reserved marinade as a dressing.
