4 ripe bananas; sliced
8 ounces frozen strawberries
8 ounces frozen mangoes
1 lemon; zested
Line a freezer-safe plate with plastic wrap. Place sliced bananas on it and cover with plastic wrap; freeze until solid, about 4 hours, or overnight.
Place bananas in food processor and blend until smooth; you may need to occasionally stop and rearrange the contents for the processor to blend. Then, add mangoes and blend until smooth; add strawberries after; make sure you don’t overload your food processor.
Transfer ice cream into a freezer-safe container; fold in lemon zest and freeze for at least 2 hours, or overnight. Take ice cream out to soften before serving.
