5 cardamom pods; crushed
5 star anise
4 inches ginger; peeled and grated
2 cups sugar
1 bottle Moscato (or any sweet white) wine
1/2 teaspoon saffron
1/2 teaspoon salt
6 D'Anjou pears; peeled and halved
pumpkin ice cream
Toast cardamom and star anise in a large pot over low heat, about 3 minutes. When fragrant, add ginger and saute until fragrant, about an additional minute.
Then, add 4 cups of water and deglaze the pan. Stir in sugar and continue stirring until the all of it has dissolved. Add wine, saffron, salt, and pears and bring to a boil.
Reduce heat to medium and simmer for at least an hour. Check occasionally and add extra water as needed to make sure the pan doesn't dry and burn.
Serve pears with a spoon of syrup and a scoop of homemade pumpkin ice cream. Get the
