Mint Ice Cream Sandwiches

A great way to utilize any extra fresh ice cream you made is to make a different, yet equally delicious, dessert!
3 pints fresh mint ice cream
1/2 cup butter; softened
3/4 cup white sugar
1/4 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa powder
1 1/2 cup flour
First, make the 3 pints of mint ice cream according to this recipe:
Preheat the oven to 375 F and line two large baking sheets with parchment paper.
Use a stand or hand mixer to cream together the butter, white sugar, brown sugar.
Then, whisk in the egg, baking soda, salt, and cocoa powder.
Add 1/2 cup of flour at a time, and whisk until the mixture is combined.
Then, use a 1 and 1/2-inch scoop to scoop balls of dough. Place balls on the baking sheet spaced 2 inches apart from each other. Repeat until all the batter has been used up.
Flatten the cookies slightly to look like miniature hockey pucks.
Bake cookies on the second and fourth racks of the oven for 10 minutes.
When the cookies have finished cooking, let them cool completely.
Add a large scoop of fresh mint ice cream in between two cookies of similar size and push together to create a sandwich.
Freeze sandwiches in the freezer for at least ten minutes before serving.
