Fresh Mint Ice Cream
Easy for All
No more artificial mint ice cream from the supermarket after this! The fresh mint gives the ice cream a vibrant, fresh taste, which makes this ice cream mouthwatering.
1 cup whole milk
1 oz. fresh mint leaves
3/4 cup granulated sugar
1/2 teaspoon salt
1 1/2 cup heavy cream
Food coloring (optional)
2 tablespoons mint or vanilla liqueur
In a saucepan, heat the milk over medium-low heat until the milk approaches a slight boil.
Remove from heat immediately and add fresh mint leaves. Let the mixture sit for 30 minutes.
Then, strain out the mint leaves and press the mint firmly against the strainer to extract as much mint flavor from the leaves as possible.
Whisk in sugar until completely dissolved. Then, add heavy cream.
If you want to give your mint ice cream the symbolic green coloring, add a drop of yellow and blue food coloring. Whisk the mixture until it approaches a light green color.
Cover the mixture with plastic wrap and refrigerate to cool for 1 to 2 hours, or overnight. Make sure the plastic wrap touches the top of the cream to prevent a skin from forming.
Pour cooled mixture into an ice cream maker and churn according to your machine's instructions, about 20 minutes.
In the last two minutes of the churning process, add in your liqueur.
Transfer ice cream to a container and freeze for 2 hours before serving.
