Under the cloak of "difficult-to-make dim sum," this mango pudding only takes four ingredients to make! The only thing that's complex about this dessert is the flavor!
2 0.25-ounce packets gelatin
3 Alphonso mangoes; diced
1/4 cup sugar
1/2 cup coconut milk
Sprinkle gelatin above 2/3 cups of cold water and let it sit for 15 minutes to hydrate.
Meanwhile, puree 2/3 of the diced mangoes until smooth. Add mango puree, sugar, and coconut milk to a pot over medium heat. Heat the mixture to just under a boil.
Then, add 2/3 cups of boiling water to the gelatin and mix to dissolve. Add the dissolved gelatin to the pot and stir until well combined. Taste and adjust for flavor as needed. Stir in the reserved mango chunks. Pour into ramekins or molds and chill until set, about 6 hours or overnight.
Serve mango pudding with additional fresh mango and coconut milk.
