Easy For All
Take advantage of the seasonal produce around you by making this simple spring salad. Healthy for your heart, tasty for your tastebuds!
5 oz. fresh greens
16 cherry tomatoes
1 avocado; thinly sliced
1/2 english cucumber
1/2 carrot; shaved
1 apple; thinly sliced
2 tablespoons rice vinegar
2 tablespoons sugar
2 tablespoons fish sauce
2 tablespoons coriander; minced
2 tablespoons scallions; thinly sliced
Use a vegetable peeler to slice cucumber ribbons.
In a small bowl, whisk rice vinegar, sugar, fish sauce, and coriander, and scallions until the sugar has fully dissolved.
Toss the greens, cherry tomatoes, avocado, cucumber ribbons, shaved carrots, and sliced apples.
Garnish with sesame seeds and serve the salad with the herb dressing.
