1 french baguette
1/2 cup balsamic vinegar
2 tablespoons brown sugar
8 oz. pearl tomatoes
3 sprigs coriandre; thinly sliced
salt & pepper
Thinly slice 6 quarter-inch slices from the baguette; drizzle with olive oil and season with salt & pepper.
Heat a grill or non-stick pan over medium-high heat and toast baguette slices until golden, about 3 minutes per side.
In a saucepan, combine balsamic vinegar and brown sugar over medium heat.
Stir continuously until the sugar fully dissolves, and the sauce starts to thicken.
Meanwhile, dice the tomatoes, season with salt, and drain the juices.
Start assembling the bruschetta: drizzle balsamic glaze over baguette slices, top with tomatoes, and garnish with coriandre.
